A fantastic Thai recipe for steamed Seabass that is light & healthy and very tasty, its a change from traditional recipes and has a lovely kick from the chilli. It's quick and easy to follow:

Ingredients (serves 2)

2 Seabass Fillets

3 Tablespoons of Fish Sauce

2 Tablespoons of Lime Juice

1 Tablespoon of Palm Sugar

Fresh Coriander ( a small bunch)

2 Cloves are Garlic

4 Red Chillies ( you can reduce this if you prefer a mild version)

We source fabulous Steaks from our local butcher and what better to go with it than a homemade Creamy Peppercorn Sauce. It's quick and easy to make your own sauce, just follow our recipe and serve with your favourite Steak. We have used Grain Fed Rump for our recipe, you can also choose from wonderful Aberdeen Angus Fillet & Sirloin & aged Rib Eye steaks on our website.

Ingredients for 4:

Whole Peppercorns (enough to cover both sides of each steak)

Butter (2 ounces)

Olive Oil (2 table spoons)

Brandy (half a cup)

Double Cream (half a cup)

Pinch of Salt

A very tasty and easy casserole  recipe using the highest quality Venison meat. 

Ingredients: 

4 Seafresh Venison Steaks, 2 sticks of celery, 2 large carrots, 1 large parsinp, 1 large onion, 6 medium closed cup mushrooms (quartered), 3 - 4 oz Plain Flour, 2 cloves of garlic, 4 - 6 tblspns olive oil, seasoning, 500ml beef stock, 500ml red wine, 2 large tblspns redcurrant jelly. 2 Bay leaves, New potatoes. 2 - 3 oz butter. Chopped parsley.
