Ingredients
  • 1tablespoon olive oil
  • 300grams New potatoesthinly sliced
  • 125grams Smoked Baconsliced
  • 1whole Brown Onionfinely chopped
  • 500grams Naturally Smoked Cod
  • 300ml Double creamthickened (lightly whipped)
  • 300ml Milk
  • Fresh Parsley (Chopped)
  • 2ind. Bay leaves
Instructions
  1. prepare the ingredients
  2. Cook the sliced potatoes in salted water until soft. then drain before adding to the poaching mix.
  3. Whilst the potatoes are cooking …Fry the bacon strips in the olive oil until crispy then remove and drain. (use a deep frying pan)
  4. Gently fry the chopped onions in the same oil for 2 -3 minutes without colouring.
  5. Add the Smoked Cod along with the cream, milk, chopped parsley and the bay leaves to the pan and bring to a gentle simmer. Add seasoning and cover with a sheet of baking paper. Poach for approx 7 – 8 mins on a gentle heat.
  6. Remove the baking paper and add the pre cooked sliced potatoes. Warm through for a further 5 mins then serve. Top with the crispy bacon strips and garnish with a little more chopped parsley and a slice of lemon.
