Salmon is a great fish, very versatile. It works well simply on it’s own or with a sauce the choice is yours. We have a great honey glaze recipe, this is to add a little extra flavour without having to make a sauce. Perfect when you are busy and even better, our kids love it too! Instructions
  1. Pour the honey over the Salmon Fillets and gently toss them so as much of the salmon is covered as possible
  2. Heat the olive oil in a large non-stick frying pan and pan fry the coated salmon over high heat, 3-4 minutes each side until the salmon is light pink and just cooked through. Take care when turning the Salmon so not to break the fillets. Whilst this is cooking add the spinach to a microwaveable bowl with a dash of water, salt & pepper, cover with cling film and microwave for 3 minutes. Leave the cling film on until serving.
  3. Then add the lemon juice to the Salmon pan and heat until it's gently bubbling and leave one minute. The honey will start to glaze and go sticky. After one minute add most of the sesame seeds leaving a few to sprinkle later and do the same with the chopped spring onions.
  4. Then remove the salmon from the pan, plate them up and spoon the glaze over the fillets, making sure a few sesame seeds and spring onions go on each fillet.
  5. Remove the spinach from the bowl and serve next to the salmon, along with the rice and avocado. Sprinkle a few sesame seeds and chopped onions over the whole dish.
