Cook from defrosted: Defrost the steaks overnight in the fridge or a few hours at room temp.
Pan fry: Heat a knob of butter and drizzle of cooking oil into a large skillet or frying pan. Using oil & butter stops the butter from burning. The T-bones are quite large so if cooking more than one you will need a large pan. Or just cook one at once.
Once the oil & butter have melted and are sizzling a little add the steaks, cook for 4 minutes (try and not touch them so they get a nice brown glaze) then turn the steaks and repeat on the other side. Sear each edge of the steak, this will crisp / brown the fat too. Depending how you like your steaks:
Rare: 4-5 mins each side
Medium 5-6 minutes each side
Well done 7-8 minutes each side
You will see the steaks change colour, they look good on a griddle / skillet as this will give you lines of colour, like a BBQ. Ovens & hobs vary so it’s a good idea to cut the steak a little so you can see inside. If you are not sure if they are cooked enough, remove them from the heat and rest for a minute. If they are not cooked enough you can always cook them a little more.
