INGREDIENTS:

For the marinade:
  • 2 TBS light soy sauce
  • 2 TBS light olive oil
  • the juice of one orange
  • 3 TBS rice wine vinegar
  • 1/2 tsp crushed red chillies
  • 1 TBS finely grated peeled fresh ginger root
You will also need:
  • 4 (6 ounce) salmon fillets, about 1 1/2 inched thick
  • fine sea salt and freshly ground black pepper
  • 2 TBS light olive oil
  • 2 TBS chopped fresh coriander leaf (cilantro)
  • 1 TBS minced spring onions
