As a rule of thumb, for a cooking time guide, use 45 minutes per kilo. This should give you a good estimate of the cooking time. Pre-heat your oven to 190 deg C / Gas mark 5. Place the Crown on a rack in a roasting dish and cover with foil. Baste the meat with it’s own juices every 20 mins. For a crispy skin remove the foil for the last 20 -25 mins. Once the meat is cooked let it rest for 20 minutes before carving.
