DEFROST THE DAY BEFORE – REMOVE FROM THE FREEZER 24 HOURS BEFORE YOU ARE GOING TO COOK IT – this is to make sure the Turkey Crown is fully defrosted in the centre
ALL OVENS VARY – PLEASE MAKE SURE THE TURKEY CROWN IS HOT AND COOKED IN THE CENTRE BEFORE SERVINGÂ
Pre-heat your oven to 180c/ 190 deg C / Gas mark 5 ( ovens vary).
Place the defrosted Turkey Crown in a roasting dish, rub with butter & seasoning, then try to get it into the middle of the oven.
Don’t cover to begin with, baste the turkey regularly with the juices ( you can add a little more butter, water or wine to the roasting dish if you need extra juice). This 1kg Turkey will oven bake for 1hr 15 minutes at 180c/190c. If the outside of the Turkey Crown starts to get too brown, cover with baking foil. Once cooked remove from the oven, cover with foil ( if not already) and let the Crown rest for 10 minutes.
Option 2 – Exactly as above but after rubbing with butter & seasoning add bacon rashers / fatty bacon – fatty is best as it won’t burn as much and add extra taste & juice to the crown. Baste regularly as above. Once cooked, check the Turkey is hot in the centre ( use a long knife or thermometer) remove from the oven – cover with foil ( if not already) and let the Turkey rest for 10 minutes. Remove the bacon before serving (this is just to add extra flavour)
